Kids and Vegetables. As much as I would love for them to go together, they don’t always. My younger guy, will eat them but even he has begun to pick up the pickier ways of his older brother. Big brother won’t eat vegetables and I offer them or put them on his dinner plate, however, if I were to casually put them on the picnic table while camping with either humus or ranch dip then he will quietly eat them as he plays. Especially with a limited food variety at camp, it’s a perfect time to put out some raw vegetables out for kids to munch on while waiting for dinner to cook. Here are some more ideas:
Carrot & celery sticks, cucumber slices, cherry tomatoes and broccoli are all favorites that go well dipped into humus or ranch dip.
Another great way to get vegetables into your kids is to mix it with a cold pasta salad! Most times my kids are in such a hurry to eat and go play again, this is a great way to get a few veggies into them!
Are you grilling tonight? How about an ear of sweet corn, wrapped in foil and thrown on the grill as well?
Nothing says camping like sweet Corn on the Cob especially when cooked over the grill. Can anyone really pass up sweet yellow corn with butter? Yum!
Feeling adventurous? Another grilling idea is to lay sliced vegetables directly on the grill (spray with oil in a can first to keep it from sticking to the grill or dip in balsamic vinegar first).
Try vegetable skewers with or without meat or grilled zucchini or carrots.
